Easy Bake Diabetic Dessert Recipes 1: Baked apples

Here is the first of three easy diabetic dessert recipes which can be cooked in the oven while the rest of the meal is being prepared.

Baked apples

1 cooking apple (Bramleys are best) per person
For each apple:
2 tblsp unsweetened orange juice or apple juice
2 tblsp raisins or sultanas
a pinch of ground cinnamon
a pinch of grated nutmeg (optional)

Core and peel each apple. Place the apples in a casserole dish leaving space about the width of 2 fingers between them, or in individual dishes if preferred.

Mix the fruit with the spices.

Fill each apple with the spiced fruit, pour juice over. Cover with wax paper or the wrapping from a pack of butter.

Bake in an oven set at 170ºC 350ºF for 25-30 minutes until the apples collapse slightly and a fork pierces the skin easily.

OR

Bake in the microwave on high for about 2 min (check after 1 minute and do the remaining of the cooking in 30 second bursts) for 1 apple - add about 1 minute for each additional apple - until tender.

Serve warm.

Serving size: 1 apple. Exchange per serving: 1½ fruit.
