Easy Bake Diabetic Dessert Recipes 2: Baked pears

This is the second of three easy diabetic dessert recipes which can be cooked in the oven while the rest of the meal is being prepared.

Baked pears

2 Servings

1 large pear, peeled, halved and cored
2 tblsp chopped mixed dried fruit
½ tsp ground cinnamon
2 tsp brandy (optional)
¼ cup (60 ml, 2 fl oz) unsweetened apple juice

Preheat the oven to 170ºC 350ºF. Spray a small baking dish with nonstick cooking spray.

Place pear halves cut-side up in the baking dish. Sprinkle each half with dried fruit, cinnamon and brandy, if used. Pour the apple juice into the bottom of the baking dish.

Bake for 20 minutes. Remove from the oven and leave to cool for 5 minutes before serving.

Serving size: ½ pear. Exchange per serving: 1½ fruit.
