Easy Bake Diabetic Dessert Recipes 3: Fruit compôte
This is the third of three easy diabetic dessert recipes which can be cooked in the oven while the rest of the meal is being prepared.
Fruit compôte
6 Servings1 cup diced apples
1 cup diced pears
½ cup diced dried apricots
½ cup raisins or sultanas
1/3 cup brandy or red grape juice
2 tblsp fresh lemon juice
2 tsp honey
½ tsp cinnamon
¼ tsp nutmeg
Preheat the oven to 170ºC 350ºF. Combine all ingredients and put into a small casserole dish.
Cover and bake for 20-25 minutes, until fruit is soft.
Exchange per serving: 1½ fruit.
