Diabetic Dessert Recipes with Bananas 1: Banana Split

Here are some diabetic dessert recipes using bananas for you. Bananas are great for anyone on a low sodium diet, because they contain at least 350mg of potassium each, and only 140mg of sodium. Excluding sodium improves the ratio between potassium and sodium in the body, and eating bananas gives a welcome boost to potassium levels as well.

Banana Split

4 servings

1 4-serving pack watermelon flavor sugar free gelatin (jelly mix)
1 cup boiling water
½ cup cold water
2 medium bananas
½ cup light whipped topping - defrosted if necessary
1 tblsp chopped walnuts

Put the boiling water into a medium sized bowl and dissolve gelatin in it completely.

Stir in cold water. Pour slowly into an 8-inch (20cm) square pan. Refrigerate for at least 3 hours until firm. Cut into ½-inch (1cm) cubes.

To serve, peel and split bananas in half lengthwise just before serving. Place 2 halves in each of 4 dessert dishes. Spoon the gelatin cubes evenly over the top and garnish with whipped topping and chopped walnuts.

Serving size: 1 banana. Exchange per serving: 1 fruit, ½ fat.
