Diabetic Dessert Recipes with Bananas 3: Bananes Flambés
This is the third of three diabetic dessert recipes containing bananas for an extra potassium boost, which helps with low sodium diets. This one also gives you the chance to show off and your spouse the excuse to say “Not flaming bananas again!” (This is a British joke)
Bananes Flambés
6 Servings6 small ripe bananas
2 tblsp low-calorie margarine
1 tblsp brown sugar
½ tsp allspice
¼ cup (60ml, 2 fl oz) dark rum
3 cups sugar-free low-fat frozen vanilla yogurt
Put a heatproof mat on the dining table. Peel and slice the bananas. Melt the margarine in a frypan. Add bananas and sprinkle with sugar and allspice. Sauté until bananas are browned.
Pour into the serving dish. Warm the rum in a small pan until it is warm enough to light with a long match. Set it on fire, pour over the bananas and take carefully through to the table (use oven gloves). Wait for applause.
When the flames die down, serve bananas with vanilla yogurt.
