Diabetic Dessert Recipes for Summertime 1: Fresh Fruit Salad
It’s summertime in Australia, but I’m in Bonny Scotland, dreaming of warmer days. For those of you Down Under, here is the first of three diabetic dessert recipes just right for keeping you cool.
Fresh Fruit Salad
8 Servings300g (12 oz) melon or grapes, seeds removed
200g (8 oz) fresh pineapple
200g (8 oz) apricots or kiwi fruit
100g (4 oz) mandarin segments or strawberries
200 ml (8 fl oz) unsweetened orange, apple or grape juice
Cut all the fruit into similar sized pieces (large grapes can be cut in half, smaller ones left whole). Cover with the fruit juice and leave in the refrigerator overnight to allow the flavours to blend.
Serve with real or fake cream.
Calories per serving (of 8), without topping: 53-75. For lowest calorie serving, use melons, pineapple, apricots, strawberries and orange juice.
Nutrition facts (per serving, without topping): Carbohydrates 13-20g; Protein 1-1.25g; Fiber 2g; Fat 0-trace; Sodium 2-9mg. For lowest sodium serving, omit melon.
