Diabetic Dessert Recipes for Chocoholics 1: Chocolate Banana Mousse

I know diabetic dessert recipes with chocolate are top of the list for most people (I must have a ‘chocolate gene’ missing or something, because I prefer coffee myself). This is the first of three dessert recipes suitable for diabetics, with chocolate as the main ingredient.

Chocolate Banana Mousse

8 servings

1 ounce (30g) unsweetened chocolate
1 cup (8 fl oz, 250ml) evaporated nonfat milk
3 tblsp granulated sugar replacement
2 egg yolks
1 tsp vanilla extract
2 bananas

Combine the chocolate, a quarter cup (2 fl oz, 60ml) of the milk and sugar replacement in top of double boiler. Chill remaining milk quickly in the freezer.

Cook, stirring continuously once the chocolate starts to melt, over simmering water until the chocolate melts.

Pour a small amount of the hot chocolate mixture over the egg yolks and beat well. Pour egg mixture into chocolate mixture on top of double boiler and stir in.

Continue to cook and stir over the hot water until the mixture thickens. Cool completely.

Scrape cold or slightly frozen milk into a mixing bowl and beat until very stiff. Fold the chocolate mixture into the milk.

Peel and slice the bananas. Fold in vanilla and banana slices. Spoon into freezer tray or 8 individual cups and freeze until firm.

Exchange: 1 bread, 1 fat.
