Diabetic Dessert Recipes for Chocoholics 2: Mint Choc Cheesecake
This is the second of three diabetic dessert recipes for chocoholics. It’s a minty chocolate treat which will do just as well on its own (perhaps better - I always find cheesecake is too filling for dessert). If you prefer not to use alcohol, replace the Schnapps with ¼ cup water and 1 tsp peppermint extract.
Mint Choc Cheesecake
12 Servings1¼ cups graham cracker or digestive biscuit crumbs
1 tblsp butter melted
1 tblsp water
2 tblsp cocoa powder
16 ounces low fat cream cheese
¼ cup sugar
¼ cup peppermint Schnapps
2 eggs beaten
¾ cup cocoa
1 tsp vanilla extract
Preheat oven to 325ºF (150ºC). Combine cocoa and crumbs, mix in the melted butter and water and press into the bottom of a loose bottomed pan. Bake for 5 minutes.
Remove from oven and leave to cool. Turn the oven up to 375ºC (180ºF).
Beat cream cheese and sugar together well. Add remaining ingredients and pour over the crust. Bake for 40 minutes until the filling has set.
Cool before serving.
Serving size: 1/12th of cheesecake. Exchanges per serving: 2 Saturated fat, 1½ Carbohydrate.
