Diabetic Dessert Recipes for Spring 1: Apple Crunch
If you grow apples, you can use up what’s left of the Winter store for this, as the apples don’t need to be new. Alternatively, you can buy a bag of good apples - I recommend Cox’s if you can’t get cookers - from your local store.
Apple Crunch
6 Servings
2 slices dry bread
1 tblsp diet margarine
½ tsp cinnamon
½ tsp allspice or mixed spice
3 cup apples, cored and sliced
1 tbsp lemon juice
¾ cup dietetic maple syrup
Preheat oven to 180ºC, 350ºF.
Mix the sliced apples with lemon juice, maple syrup, and the remaining allspice/mixed spice. Spread in a well-greased shallow baking dish about 8 inches (10cm) round.
Cut the bread into quarters and toast in the oven until crisp. Crumb.
Mix toasted crumbs with margarine, cinnamon, and half the allspice or mixed spice.
Cover the apples with the crumb mixture and bake for 45 minutes or until the apples are tender.
Serve warm.
